Young Master Sommelier and Restaurateur Xavier is one passionate about Champagne. Leading member of the Champagne Academy he is running with Agnar Sverrisson one of London hottest restaurant, the Award Winning TEXTURE on 34 Portman Square. A real believer that Champagne is fine wine rather than just a bottle of bubbly he compiled a list of 90 different bottles in his restaurant. With the crafted cooking of Aggi (Agnar) they have created the ultimate experience of Champagne & Food in the UK. We strongly encourage you to taste their Fish & Champagne Menu. Both met at Raymond Blanc’s “Le Manoir aux Quat’Saisons” where Xavier was Chef Sommelier and Aggi Head Chef.
