Originally from Touraine in France, Mathieu first learnt about his job in the Basque country at un-pretentious La table des Frères Ibarboure, he then moved to Paris and worked in top places including Petrossian, the French King of Caviar. In the UK he worked with Matthew Wilkins at The Capital Hotel and offered his knowledge to an Italian group before joining Shane Osborn.
