Ingredients
 
For 6 Servings:
36 Fresh Colchester Oysters
3 Sea-urchins, opened
3 Lobsters, Steamed and chilled cut in half
3 Large Crabs, steamed and chilled
36 Langoustines, steamed and chilled
200g Winkles, steamed and chilled
200g Clams, steamed and chilled
300g Prawns, steamed and chilled
200g, Shrimps, steamed and chilled
1 Sliced Wholemeal Bread & Butter (For the oysters)

Preparation
 
Condiments:
1. Oyster Vinaigrette:
In a bowl chop finely a shallot and add red wine vinegar
2. Lemon Mayonnaise:
Add the juice of half a lemon to a bowl of mayonnaise
3. Cocktail Sauce:
Mix in a bowl 200g Mayonnaise, 1 tea spoon Ketchup, 5cl Cognac, 3 drops Tabasco sauce, 6 drops Worcester Sauce, 1 pinch Cayene Pepper
Add a bowl of plain mayonnaise.
Don't forget your tools: Curettes, Crab Cracker and oyster forks.
Make sure you have additional bowls for shells.
