Ingredients
For 6 servings:
250g Chosen Caviar
2 Hard boiled eggs
Chop very finely the whites
Press the yolks through a thieve
100g Baby capers
100g Very finely chopped gherkins
100g Very finely chopped white onion
1/2 Bunch finely chopped chive
1/2 Bunch finely chopped flat parsley
24 Mini blinis
12 Boiled Ratte potatoes (Warm)
200g Sour cream
1 Lemon
Preparation
1. Choose your caviar:
Beluga is the world's most expensive caviar. Its roe is very large, ranging in color from black to pale grey, and has a smooth, buttery flavor.
Oscietra Caviar consists of medium-sized eggs, ranging in color from dark brown to light grey and even golden brown. Many prefer Oscietra's nutty, slightly fruity flavor over Beluga.
Sevruga Caviar sturgeon produces the smallest roe. Its roe is black to very light grey in color and, like Beluga, it has a buttery flavor, but saltier, richer, and more intense. It's unique flavor is highly valued.
2. Place your caviar tin over crushed ice and serve with pearl spoons
3. Dispatch all ingredients in individual bowls with a moka spoon each
5. Serve. Your guests will do their own "cooking"
