This 100% 50 year’s old vines Chardonnay is vinified entirely in oak barrels. Deep gold in color with very little bubbles, you can sense straight away that it is going to be a different ball game. Hazelnuts, cocoa beans, Brioche, kirsch cherries, the use of oak definitely added an extra dimension to the wine. Not very fizzy but very pure, mineral, fresh, savory, almost sloe berry like and incredibly long on the finish. So intense and full I would have it with roast duck magret with juniper berries.
