The colour is a clear golden, with fine bubble. The nose is complex with spicy, toasted, bread crumbs and deep yellow fruits. The mouth is medium bodied, with fine bubbles, transparent acidity, energetic and creamy. I was impressed by the maturity and depth of flavours and the energy and clean acidity providing an inviting freshness. Ideal with Oysters in a saffron-ginger tempura.
